PASTA PRIMAVERA 
1 c. fresh chopped broccoli
1/2 c. chopped onion
2 cloves garlic, finely chopped
1 carrot, sliced thin
3 tbsp. vegetable oil
1 tsp. salt
2 med. tomatoes, chopped
4 c. hot cooked linguini or shell macaroni
1/3 c. freshly grated Parmesan (not canned) or Monterey Jack cheese
2 tbsp. finely chopped fresh parsley

Cook and stir broccoli, onion, garlic and carrot in oil in skillet over medium heat until broccoli is tender-crisp, about 10 minutes. Stir in salt and tomatoes; heat just until hot. Pour over pasta and sprinkle with cheese and parsley. Can substitute other vegetables and can add 2 cups cooked and diced chicken or turkey. Makes 6 servings.
