BAKED CHICKEN BREAST 
1/2 c. butter
1/2 c. corn oil
4 lg. boneless chicken breasts, split in half
Salt
Italian style bread crumbs
2 lg. onions, chopped (2 c.)
3/4 c. fresh mushrooms, sliced
2 tbsp. garlic salt or powder
Black pepper to taste
1/3 c. dry white wine or vermouth
Mozzarella cheese slices

Heat 1/4 cup butter and 1/4 cup oil in large skillet. Sprinkle chicken breasts with salt; coat in bread crumbs. Brown chicken in butter-oil mixture. Place chicken in a separate flat baking pan. In same skillet as chicken drippings, cook onions until wilted. Add mushrooms and additional oil and butter, as needed. Cook until tender. Add garlic salt and pepper to taste. Add wine tossing gently. Pour mushroom mixture over chicken; top with mozzarella cheese slices. Cover with foil. Bake at 350 degrees for 55 to 60 minutes. Serves 6.
