PICKLED BEETS 
6 qts. beets, cooked, peeled & sliced
4 c. sugar
3 tsp. salt
6 c. vinegar
3 c. water
1/2 box whole pickling spice in cloth

Combine all ingredients and simmer 15 minutes. Place into hot jars, leaving 1/4" head space. Adjust caps. Process in boiling water bath for 10 minutes.
