MEAL IN A MUFFIN 
1 egg, slightly beaten
1/4 c. oil
1 c. low-fat cottage cheese
1 c. milk
1 c. shredded carrot or zucchini
1 c. flour
2 tsp. baking powder
1/2 c. raisins
1/2 c. nuts
1 c. whole wheat flour
1/4 c. brown sugar

Combine the dry ingredients. Add the remaining ingredients all at once, and stir until lumpy. Bake at 375 degrees for 25-30 minutes.
