A MEAL IN A MUFFIN 
1 c. flour
3/4 c. whole wheat flour
1/2 c. oatmeal
1 c. sugar
1 1/2 tsp. baking powder
1 egg, beaten
1/4 c. salad oil
1/2 tsp. baking soda
1 tsp. salt
1/2 c. raisins
1 tbsp. grated orange rind
1 c. carrots, grated
3/4 c. fresh or reconstituted orange juice

Blend flour, oatmeal, sugar, baking powder, baking soda and salt. Add raisins; mix so they are well coated.

Combine grated carrots and orange rind; add to flour mixture.

Combine beaten eggs, oil and orange juice; stir into dry ingredients until well mixed. Fill lined 3 inch muffin pans to 2/3 full. Bake at 400 degrees for 20 minutes. Yield 12 muffins.
