BLACK BOTTOM CUPCAKES 
3 c. flour
1/2 c. cocoa
1 tsp. salt
2/3 c. oil
2 tsp. vanilla
1 egg
1/8 tsp. salt
2 c. sugar
2 tsp. baking soda
2 c. water
2 tbsp. vinegar
8 oz. cream cheese
1/3 c. sugar
6 oz. chocolate chips

Preheat oven to 350 degrees. Sift flour, sugar, cocoa, soda and salt. Mix water, oil, vinegar and vanilla. Add wet ingredients to dry. Mix separately cream cheese, egg, 1/3 cup sugar and 1/8 teaspoon salt. Beat well. Stir in chocolate chips. Fill muffin cups lined with paper 1/3 full with chocolate batter. Top each with heaping teaspoon cream cheese mixture. Bake 30 to 35 minutes. 36 servings.
