BAKED STUFFED BASS 
3 to 4 lb. bass, cleaned
Salt and pepper to taste
1/4 c. butter
1/4 c. chopped onion
1/2 c. chopped celery
4 c. dry bread crumbs
1 egg, beaten
1/4 tsp. thyme
1/2 tsp. parsley
1 tsp. salt
1/8 tsp. pepper
Melted butter or bacon strips
1 tbsp. lemon juice

Dry fish and sprinkle inside with lemon juice, salt and pepper. Place fish on a well greased baking dish or pan. Melt butter in skillet and saute onions and celery until they are tender. Add to bread crumbs along with egg and seasonings. Mix thoroughly, add 2 tablespoons of milk if dressing seems dry.

Stuff fish loosely with dressing. Brush with melted butter or cover with strips of bacon held in place with toothpicks. Bake at 350 degrees for 45 minutes to 1 hour or until fish flakes easily with fork. Yield: 6 servings.
