2 eggs 1 c. sugar 1 c. flaked coconut 1 c. chopped dates 1 c. chopped nuts 1 tsp. vanilla 1/8 tsp. almond extract In mixing bowl, beat eggs well; gradually beat in sugar, beating until smooth and fluffy. Add coconut, dates, nuts, vanilla and almond extract, beating well. Turn into a greased 2 quart casserole. Bake at 350 degrees for 30 minutes. Remove from oven and immediately stir well, then allow to cool completely. Shape into balls, about 1 inch in diameter. Roll each ball into powdered sugar, then store in an airtight container. Makes about 3 dozen. |
