BANANA CUPCAKES 
1 c. sugar
1/2 c. oil
2 eggs
1 3/4 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. nutmeg
1 c. mashed bananas

Combine sugar, oil and eggs; blend well. Sift together dry ingredients and add to first mixture. Fold in bananas last. Pour into prepared (greased and floured) pans or paper cups.

Optional: Dates or raisins may be added.

Bake 375 degrees for 25-30 minutes.

Yield: 1 - 1 1/2 dozen cupcakes.
