PAT'S RITZ CRACKER PIE 
1 c. sugar
3 egg whites
1 c. chopped pecans
25 Ritz crackers, crushed
3/4 tbsp. vanilla
Cool Whip

Crush crackers and mix with 1/2 cup sugar, nuts and vanilla. In another bowl, beat egg whites until stiff using other 1/2 cup sugar. Fold egg whites into dry mixture. Pour into buttered (or use Pam) 9" pie plate and bake at 300 degrees for 35 minutes. Cool, refrigerate. Serve with whipped topping.
