CHOCOLATE MOUSSE 
1 (12 oz.) pkg. chocolate chips
3/4 c. boiling water
6 eggs, separated
1 tbsp. almond extract

Mix chips in blender, add boiling water and mix again. Add 6 egg yolks. Beat egg whites separately until stiff. Fold chocolate mixture into whites. Add extract. Pour into mold or individual parfaits. Chill for 3 hours. Serves 4-6.
