TOP OF STOVE SUPPER 
1 tbsp. butter
2 potatoes, sliced thin
Salt and pepper to taste
1 tbsp. onion, chopped
1 tbsp. green pepper, chopped
1 c. diced cooked ham
2 eggs, beaten
1/4 c. shredded Cheddar cheese

Melt butter in large skillet. Layer next 6 ingredients in skillet. Cover and cook on low heat for 30 minutes. Pour eggs over ham mixture, cook for 15 minutes. Sprinkle with cheese, cover 5 minutes or until cheese melts.
