AMERICAN PATE (MEAT LOAF) 
3/4 lb. fresh spinach, thoroughly rinsed and stems removed, or 1 (10
oz.) pkg. leaf spinach, thawed, and squeezed dry
3/4 lb. ground lean beef or ground turkey
2 cloves garlic, minced
1 med. onion, diced
1/4 c. dry bread crumbs
1 (6 oz.) can tomato paste
1 lg. egg

Preheat oven to 350 degrees. If you are using fresh spinach, rinse one last time and place in a saucepan. Cover and steam over medium-high heat for 4 minutes. Drain, squeezing the leaves as dry as possible. In a large mixing bowl, combine meat, garlic, onion and bread crumbs. Mix thoroughly. Add tomato paste and egg; mix well. Mix in the spinach. Transfer mixture to an 8 1/2 x 4 1/2-inch loaf pan. Cover with foil. Bake for 45miutes; then remove the foil and bake 30 minutes longer. Let the meat loaf sit for 5 minutes before cutting.

Bake 350 degrees for 45 minutes with foil and 30 minutes without. Serves 4-6.
