MUSHROOM MOCK QUICHE 
3 c. sliced mushrooms
1 c. chopped green onions
1 clove garlic, pressed
2 tbsp. butter
1 1/2 c. milk
2/3 c. biscuit mix
1 c. shredded cheddar cheese
1/8 tsp. pepper
1/2 tsp. salt
1/2 tsp. thyme
4 eggs
1 tsp. dijon mustard
1 tsp. parsley

Preheat oven to 350 degrees. Saute mushrooms, onions and garlic in butter. Spoon into 10 inch pie pan. Combine milk, cheese, biscuit mix, eggs, mustard, parsley, thyme, salt and pepper until blended. Pour into pan. Bake in oven 35 to 50 minutes until knife inserted comes out clean. Let stand 10 minutes before cutting. This tends to stick to the pan so use an unbaked pie crust. This can easily be increased to serve more people. Serves 6.
