MUSHROOM CRUST QUICHE 
3/4 lb. mushrooms, coarsely chopped
5 tbsp. butter
1/2 c. finely crushed saltines
3/4 c. sliced green onions with tops
8 oz. Monterey Jack cheese, shredded
1 c. cottage cheese
3 eggs
1/4 tsp. pepper
1/4 tsp. paprika

Saute mushrooms in 3 tablespoons butter until limp. Add saltine cracker crumbs. Spread into buttered 9 inch pie pan. Saute onions in remaining 2 tablespoons butter for 1 minute. Spread onions over mushrooms. Sprinkle shredded cheese over onions.

Blend together next three ingredients (cottage cheese, eggs, pepper) until smooth. Carefully pour into pie plate. Sprinkle with paprika. Bake at 350 degrees for 30 minutes or until knife inserted in center comes out clean.
