SWEET POTATO PIE 
1/4 c. butter, softened
1/2 c. packed brown sugar
1 c. mashed cooked sweet potato
3 eggs, lightly beaten
1/3 c. corn syrup
1/3 c. milk
1/2 tsp. salt
1 tsp. vanilla extract
1 unbaked pie shell

Preheat oven to 425 degrees. Cream butter and brown sugar in bowl until light and fluffy. Blend in sweet potato and eggs. Add next 4 ingredients; mix well. Pour into 9-inch pie shell. Bake for 10 minutes. Reduce temperature to 325 degrees. Bake for 35-45 minutes or until set. Yield: 6 servings.
