SWEET AND SOUR MEATBALLS 
1 lb. ground turkey
1 sm. onion, chopped fine
1/4 c. bread crumbs
1 1/2 tbsp. cold water
1/4 c. Egg Beater (egg substitute)
Salt & pepper to taste
2 tbsp. cooking oil (cholesterol free)
1/2 c. packed brown sugar
1 tbsp. cornstarch
1 (13 1/4 oz.) can pineapple chunks
1/3 c. vinegar
1 tbsp. soy sauce
1 green pepper, coarsely chopped

Mix together first 7 ingredients and fry in the 2 tablespoons oil. When brown, remove and drain fat from skillet. Mix brown sugar and cornstarch in skillet. Stir in pineapple (with syrup), vinegar and soy sauce. Heat to boiling, stirring constantly; reduce heat and add meatballs. Cover and simmer, stirring occasionally 10 minutes. Stir in green pepper, cover and simmer until it is crisp-tender, 5 minutes. Serve with steamed brown rice.
