LYONNAISE POTATOES 
3 tbsp. butter
1 sm. onion, finely chopped
3 c. potatoes, cubed
1/4 c. beef or chicken broth
Salt and pepper

Saute onion in melted butter. Add the potatoes and mix well. Stir in broth, reduce heat, cover and simmer until the potatoes are tender and browned on the bottom. Season to taste.
