BEETS A L'ORANGE 
2 c. canned sm. whole beets, undrained
2 tsp. vinegar
2 tbsp. grated orange rind
2 tbsp. lime juice or lemon juice
1 c. orange juice
1/2 tsp. ground nutmeg
3 tbsp. cornstarch

Drain beets; reserving juice. Add water to juice to make 1 cup. Simmer beet juice, vinegar, orange rind, lime or lemon juice, orange juice, nutmeg and cornstarch, stirring until sauce is thick enough to coat a metal spoon. Add beets; heat through. 99 calories, 0 fat. Serves 4
