LOW CHOLESTEROL BREAD PUDDING 
2 c. skim milk
1/2 c. sugar
1/2 c. Egg Beaters
1 tsp. vanilla
1/2 tsp. cinnamon
1/4 tsp. salt
2 c. bread cubes, 1 inch

Combine milk, sugar, eggbeaters, vanilla, cinnamon and salt in a large bowl. Stir in bread cubes. Divide mixture evenly among 5 (6 oz.) custard cups or put in casserole. Set in a pan of hot water about an inch deep. Bake at 350 degrees for 40 minutes or until knife inserted in center of custard comes out clean. Makes 2 to 5 servings.

Variation: 1/3 cup of raisins may be added.
