BANANA RAISIN BREAD 
2 c. sugar
1 c. shortening

6 ripe bananas, mashed
4 well-beaten eggs
1 tsp. vanilla

Blend together by hand.

2 1/2 c. flour
1 tsp. salt
2 tsp. baking soda

1 c. raisins or nuts

Combine all ingredients by hand. Grease and flour pans. Bake at 350 degrees about 1 hour and 15 minutes. Makes 2 large loaves or 3 small. Test with a toothpick (dry pick - it's done).

GLAZE:

Add warm water to 1/2 box of powdered sugar; add one or two drops lemon extract. Pour over loaves.
