MEXICAN MANICOTTI 
1/2 lb. ground beef
1/2 can refried beans
2 tbsp. chopped onion
1 tsp. oregano
1 pkg. taco mix
2 c. colby jack cheese
10 manicotti shells
1 can tomato sauce
2 c. water
1/2 c. sour cream
3 green onions, sliced
1/4 c. sliced olives

Mix beef, beans, onion, oregano, 1 1/2 tablespoon seasoning mix and 1 cup cheese; with small spoon or fingers, press mix into shells. Arrange into 12 x 8 inch microwave safe baking dish. Microwave tomato sauce, taco seasoning, and 1 cup water 6-7 minutes. Pour over shells. Microwave on high 14 minutes; turn each shell over and add remaining cup of water. Cover then microwave on medium 16 minutes until shells are tender. Let stand covered 5 minutes. Sprinkle with 1 cup cheese, green onions, and olives.

Since microwave ovens vary in power, you may need to adjust your cooking time.
