ZUCCHINI BARS 
1/2 c. butter
2/3 c. fructose or sugar
2 c. flour
2 tsp. baking powder
2/3 c. dates, sliced
1 tsp. vanilla
2/3 c. coconut
2 eggs
1/2 tsp. salt
2 c. shredded zucchini

Cream butter and fructose (sugar). Beat in eggs and vanilla. Mix flour, salt and baking powder. Add gradually to creamed mixture and beat. Stir in zucchini, dates and coconut. Spread in a 10 x 15 pan. Bake at 350 degrees for 40 minutes, until browned. Cut into bars.
