ITALIAN CHICKEN SUPREME 
4 boneless chicken breast halves, skinned
2 thin slices sandwich ham, cut in half
4 oz. Mozzarella cheese, cut in 4 slices
1/2 c. all purpose flour
1 egg, beaten
1 1/2 c. bread crumbs

Arrange each chicken piece between 2 pieces waxed paper, pound with mallet or rolling pin to flatten to about 1/4 inch thick. Place a piece of ham on top of each chicken piece. Add a cheese slice to each chicken piece. Roll up each chicken piece half way, fold in sides, envelope style and continue rolling, secure with a wooden toothpick. Roll each chicken piece in flour, then in beaten egg, and then in bread crumbs. Pour oil to a 1 inch depth in a large skillet. Heat to 365 degrees. Fry chicken until light brown on all sides, about 5 minutes.
