ITALIAN CHICKEN SUPREME 
4 boneless chicken breasts, half skinned
2 thin slices sandwich ham, cut in half
4 oz. Mozzarella cheese, cut in 4 slices
4 (1 inch) fresh sage or dill sprigs
1/2 c. all-purpose flour
1 egg, beaten
1 1/2 c. fresh bread crumbs
Oil for frying
Additional herbs if desired

Place chicken between waxed paper. Flatten chicken 1/4 inch thick. Place ham on chicken, add cheese slice and sage or dill. Roll chicken halfway. Fold in sides like envelope. Continue rolling. Secure with toothpicks.
