ITALIAN SEASONED CHICKEN 
3 c. frozen broccoli or Italian style mixed vegetables
4 boneless, skinless chicken breasts
2 tbsp. mayonnaise
1/3 c. Italian seasoned bread crumbs
3 tbsp. Parmesan cheese
1/8 tsp. paprika

In large strainer rinse vegetables in warm water to thaw. Place vegetables in casserole dish. Rinse chicken and pat dry. Mix bread crumbs and cheese. Coat chicken on both sides with mayonnaise, then cover with bread crumbs on both sides. Roll chicken breasts and secure with toothpick.

Place rolls on vegetables with thickest edge toward casserole. Sprinkle remaining crumbs and paprika. Cover with wax paper. Microwave at 100% for 10-12 minutes (until chicken is no longer pink).

Since microwave ovens vary in power, you may need to adjust your cooking time.
