OATMEAL RAISIN MUFFINS 
2 1/2 c. flour
1 1/2 c. uncooked oatmeal
1 c. sugar
5 tsp. baking powder
1/2 tsp. salt
1 c. milk, room temp.
2/3 c. butter, melted
2 lg. eggs, room temp.
3 tsp. vanilla
1 1/2 c. raisins

Makes 16 muffins. Heat oven to 400 degrees. Grease and flour muffin cups.

Sift together flour, oats, sugar, baking powder and salt. In another bowl combine milk, butter, eggs and vanilla. Make a well in the center of flour mixture. Add milk mixture and stir just to combine. Stir in raisins. Spoon batter into prepared cups. Bake 15 or 20 minutes until done. Cool for 5 minutes on wire rack before removing from cups. Finish cooling on wire rack and serve warm or completely cool.
