BLACKBERRY SALAD 
2 tbsp. unflavored gelatin
1/4 c. water
2 c. blackberry juice, heated
1/2 c. lemon juice
1-1 1/2 c. grated carrots
1/2 c. nuts
2 c. drained blackberries

In cold water, soften the gelatin. Add blackberry juice heated to boiling point. Stir the mixture until the gelatin is dissolved. Add lemon juice and chill.

When the mixture is like cream, add grated carrots, nuts, and blackberries. Pour into a greased mold and chill. Serve with mayonnaise.
