OLD FASHIONED SPOON BREAD 
1 pt. sweet milk
1 c. sifted cornmeal
1 1/2 tbsp. sugar
1/2 tsp. salt
1 heaping tbsp. butter
3 eggs, separated

Scald milk, add cornmeal, sugar, salt. Cook until it puffs, stirring constantly. Set off stove and add butter. Cook 3 minutes. Stir in well beaten egg yolks. Fold in beaten egg whites. Bake in heavily greased dish for 50 minutes at 350 degrees. Bread will fall when removed from oven. Eat immediately with plenty of butter.
