OAT BRAN MUFFINS 
2 egg whites
1 c. skim milk
1 1/3 c. oat bran
1 c. flour
1/2 tsp. cinnamon
1/4 c. applesauce
1 1/2 tsp. baking powder

Add egg whites to mixing bowl, beat well. Pour in milk and mix. Mix dry ingredients in a separate bowl. Add dry ingredients to liquid ingredients. Stir until moist.

Fill 12 greased or paper lined muffin cups. Bake at 400 for 15 minutes. Serve warm.
