POTATO PANCAKES 
6 med. sized potatoes
2 eggs
1/4 tsp. baking powder
1 1/2 tbsp. flour
1 1/4 tsp. salt
1 thin slice of onion

Wash and peel potatoes. Cut into 1 inch cubes. Break eggs into jar of your blender. Add baking powder, flour, salt and onion. Add about 1/4 cup of the cubed potatoes. Cover and blend at high speed. Add remaining potatoes a few at a time until all are used. Stir batter to make sure no large pieces of potato remain.

Pour about a tablespoonful at a time onto a hot lightly greased skillet or griddle. Fry until brown on each side. Serve with applesauce or sour cream.
