CHICKEN CURRY 
6 boneless and skinned chicken breasts, cut into bite-sized pieces
2 tbsp. unsalted butter
1 c. chopped white onion
2 c. tomatoes, chopped
1 clove garlic, minced
3/4 c. chopped green pepper
2 tbsp. olive oil
2 tbsp. curry powder
1/4 tsp. thyme

In a large skillet, saute chicken in olive oil until chicken is cooked. Remove chicken to platter. Melt butter in same skillet. Saute onion, garlic, and green peppers until soft. Blend in curry powder and thyme. Add chicken and stir until well coated with sauce. Mix in tomatoes. Serves 6.
