CHEESY SQUASH CASSEROLE 
1 onion, chopped
3 tbsp. butter
6 med. squash, sliced thin
1 tbsp. sugar
2 eggs, beaten
1 1/2 c. grated cheddar cheese
1/2 can chopped green chilies
Salt
Pepper
Paprika

In large skillet, saute onion in butter. Add sliced squash and let cook in its own liquid until slightly tender. Combine eggs, sugar, 1 cup cheese and chilies. Pour over squash and mix well. Pour into greased casserole dish and top with remaining cheese. Sprinkle with salt, pepper, and paprika. Cook uncovered at 350 degrees for 30 minutes.
