CHICKEN CHOW MEIN CASSEROLE 
1 tbsp. butter
1 c. chopped celery
1/4 c. chopped onion
2-3 chicken breasts, cooked and skinned
1 (5 1/2 oz.) chow mein or rice noodles
1 can cream of mushroom soup
1/4 to 1/2 c. milk
Salt and pepper to taste

Heat oven to 350 degrees. Cube chicken. Melt butter in a skillet; add celery and onion. Cook, stirring occasionally, until onion is tender. Combine all ingredients, except the noodles in a 1 1/2 quart casserole dish. Sprinkle with chow mein noodles. Bake uncovered 30 minutes until hot and bubbly.
