2 c. all purpose flour 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1 c. packed brown sugar 1/2 c. butter, softened 1 lg. egg 1 tsp. vanilla extract 2/3 c. raisins 2/3 c. chopped walnuts 1 (8 oz.) can crushed pineapple, well drained (1/2 cup) 1/3 c. flaked coconut 1/3 c. chopped maraschino cherries Preheat oven to 375 degrees. Grease cookie sheets. Mix flour, baking powder, baking soda, and salt in a medium bowl. Beat brown sugar, butter, egg, and vanilla in a large bowl with an electric mixer until fluffy. Stir in raisins, walnuts, pineapple, coconut, and cherries. Stir in flour mixture until blended. Drop by teaspoonfuls 2 inches apart on cookie sheets. Bake for 10 to 12 minutes until golden brown. Cool cookies on wire racks. |
