CHICKEN MILANESE 
4 chicken breasts, boneless
3/4 c. Parmesan cheese
2 tbsp. Parmesan cheese
3/4 c. bread crumbs
1 tbsp. fresh parsley
1/8 tsp. salt
1/8 tsp. pepper
1 egg
1/2 c. milk
2 c. olive oil
2 tbsp. butter
2 tbsp. lemon juice

Flatten chicken breasts. Mix cheese, bread crumbs, parsley, salt and pepper. Whisk egg and milk together. Dip chicken into egg, then into bread crumb mixture, coating completely. Heat oil to 375 degrees; add chicken. Cook until golden brown, about 4 minutes on each side. Drain on paper towels. Transfer to platter. Drizzle with lemon and butter mixture. We often serve this with parsley potatoes. Yields 4 servings.
