APRICOT MUFFINS 
Low Cholesterol. Makes 12 muffins.

1 3/4 c. all-purpose flour
1/3 c. sugar
1/4 tsp. salt (optional)
1 tbsp. baking powder
2 c. Kellogg's Common Sense Oat Bran cereal, any variety
1 1/2 c. apricot nectar
2 egg whites
1/4 c. vegetable oil
1/2 c. chopped, dried apricots

1. Stir together flour, sugar, salt and baking powder; set aside.

2. In large mixing bowl, combine Kellogg's Common Sense Oat Bran cereal, apricot nectar, egg whites and oil until thoroughly mixed. Stir in apricots. Add flour mixture, stirring only until combined. Portion batter evenly into 12 lightly greased 2 1/2 inch muffin-pan cups.

3. Bake in 400 degree F. oven about 25 minutes or until golden brown. Serve warm.
