CARROT COOKIES 
1 c. sugar
3/4 c. butter
1 c. cooked, cooled, mashed carrots
1 beaten egg
2 c. flour
2 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla

GLAZE:

1 c. powdered sugar
2 tsp. melted butter
1 tsp. orange juice
1 tsp. grated orange rind

Add more orange juice if needed for consistency.

Mix all ingredients together, drop by teaspoonfuls on greased cookie sheet. Bake at 350 degrees for 10 minutes. Cool, then glaze.
