GREEN BEANS, TOMATOES & HAM SOUP | |
Frozen green beans can be used in place of fresh and 1 TBSP. of minced dry onion, with 1 large can of chicken broth also can be added for a chicken & ham flavor. Boil 2-3 salt pork or a half of ham with bone, cook slow boil till ham pulls away from bone or fork inserts easily, about 1 1/2 hours. Remove ham, if using salt pork for flavoring it can be left in pot. Add 1/2 medium onion, chopped, and fresh cut and cleaned green beans, boil medium/slow, till green beans are fork tender. Add 1/8 teaspoon red pepper and 1 teaspoon salt, more or less to taste, add 2-3, 16oz cans of diced tomatoes. Add 3-5 cut & cubed potatoes, continue medium/slow boil 20-25 minutes, until potatoes are fork tender. Cube cooked ham and add to pot, or remove salt pork used for flavoring soup, when completed.
