CHICKEN STIR FRY 
3 tbsp. oil
3 to 4 boneless chicken breasts, sliced into thin strips
Vegetables (your choice) pea pods, mushrooms, carrot (sliced into thin strips), green onions, broccoli, cauliflower, cucumbers, water chestnuts, bamboo shoots
1 c. broth (1 c. water and bouillon)
Thickener (3 tbsp. cold water and 1 tbsp. cornstarch)

Heat at 375 degrees, add chicken, stir constantly; cook for 3 to 4 minutes. Add vegetables, continue stirring, cook for 3 to 5 minutes. Add broth and thickener. Serve with rice.
