NEW ORLEANS SPINACH 
2 pkgs. frozen chopped spinach
1 carton cottage cheese or 1 lb. ricotta
1/4 lb. butter
1/2 lb. cheddar cheese
3 tbsp. flour
6 eggs
1/3 c. chopped onion
1/4 tsp. Lawry's Seasoning Salt

Ricotta is best.

Cook spinach slightly (enough to defrost); drain well. Mix all and bake in buttered 8"x13" pan at 300 degrees for 1 hour. Sprinkle grated Parmesan over top.
