INDIVIDUAL CHEESECAKES 
3 (8 oz.) cream cheese, softened
1 c. sugar
5 eggs
1 1/2 tsp. vanilla

Mix softened cream cheese with sugar. Add eggs, one at a time, beat by hand after each. Add vanilla (mixture will be lumpy). Fill foil baking cups (3/4 full). Bake at 300 degrees for 40 minutes.

TOPPING:

1 c. sour cream
1/4 c. sugar
1/2 tsp. vanilla

Spoon about 1 teaspoon in center of each. Top with dab of preserves (cherry, peach, etc.). Return to 300 degree oven 5 to 10 minutes. Cool and freeze.
