PEANUT BUTTER PIE
1 pie shell, baked
1 c. powdered sugar
1/2 c. smooth peanut butter
1/4 c. cornstarch
2/3 c. granulated sugar
1/4 tsp. salt
2 c. milk, scalded
3 egg yolks, beaten
1/2 tsp. vanilla
3 egg whites, for meringue
1 tbsp. butter

Combine powdered sugar and peanut butter until it has the appearance of biscuit mix. Spread 1/2 of this mixture over the pie shell. Combine cornstarch, sugar, salt and scalded milk. Pour a small amount over the beaten egg yolks. Mix well, then return to the milk mixture. Cook in the top half of a double boiler until mixture thickens. Add butter and vanilla, pour into pie shell; top with meringue. Sprinkle the remainder of the peanut butter mix over the meringue. Bake at 325 degrees until brown, about 30 minutes.
