MANDARIN ORANGE SALAD 
1/2 head lettuce
1 (11 oz.) can mandarin oranges
2 green onions, cut up
1/2 c. caramelized almonds

TO CARAMELIZE ALMONDS: Put 4 tablespoons sugar in heavy skillet on high heat. Melt sugar until it turns brown. Add almonds. Stir until well coated. Turn onto cookie sheet. Cool and break apart.

DRESSING:

2 tbsp. sugar
2 tbsp. vinegar
1/2 tsp. salt
1/8 tsp. pepper
1 tbsp. chopped parsley
1/4 c. vegetable oil

Mix and pour over salad.
