MANDARIN ORANGE SALAD 
1/2 head lettuce and-or spinach
1 sm. can mandarin oranges, drained
1 tbsp. parsley, chopped
2 tbsp. green onion, chopped

DRESSING:

1/2 tsp. salt
2 tbsp. vinegar
1/4 c. oil
2 tbsp. sugar
1/4 c. slivered almonds

Combine lettuce and/or spinach, oranges, parsley, and green onions. Cover and refrigerate. In small frying pan heat sugar and almonds at low heat, stirring constantly, coating almonds. Cool almonds on foil.

Combine salt, vinegar and oil to make dressing. Shake vigorously. Combine salad mixture, sugar and almonds and toss with dressing. Serves 4.
