POTATO SALAD WITH OLIVES AND EGGS | |
4 eggs, hard-cooked & sliced 5 potatoes, peeled, boiled & cubed 1 c. chopped celery 2 med. onions, chopped 1/4 c. grated Romano cheese 2 cloves garlic, minced or powdered 3 tsp. chopped parsley 12 pitted black olives, sliced 1 1/2 tsp. salt 1/4 tsp. pepper 1/4 tsp. oregano 2 tsp. wine vinegar 7 tsp. vegetable oil Combine eggs, potatoes, celery, onions, cheese, garlic, parsley and olives. Season with salt, pepper and oregano. Toss gently. Combine wine vinegar and oil in a bottle. Drizzle over salad and mix well. Serves 4-6. |
