GALEN'S POTATOES, EGGS AND
VEGETABLES
 
A truly great breakfast dish! Can be served with sausage, ham or bacon.

1/2 cup canned corn
1 thinly sliced green pepper
3 green onions
2/3 cup mashed potatoes (just prepared)
3 tsp. butter
8 eggs
1/2 tsp. salt and pepper
1 cup grated three cheese blend

This recipe really requires a hand-held mixer or fine whisk.

Mix together vegetables and sauté in a medium pan. Set aside.

In a bowl, mix hot mashed potatoes, butter and eggs. Blend with a hand-held blender or whisk well with a small, fine whisk (the mixer is far easier) until it is without lumps.

In a medium pan cook the potato-egg mixture on medium heat, blending or whisking constantly, till the mix looks like mashed potatoes - again without lumps.

Put the potato-egg mixture on plates and top with warm vegetables. Top with grated cheese. I usually then put the plates in the microwave for 1 minute so the cheese will melt.

Serves 4.
