PEANUT GRAHAM COOKIES 
1/2 c. butter, softened
2 c. confectioners' sugar
3/4 c. peanut butter
1 1/2 c. graham cracker crumbs
1/2 c. semi-sweet chocolate chips
Crushed peanuts or chocolate sprinkles (optional)

Combine shortening, confectioners' sugar and peanut butter in large bowl. Beat at low speed of electric mixer until well blended. Stir in 1 cup graham cracker crumbs and chocolate chips. Cover and refrigerate 1 hour. Form dough into 1 inch balls. Roll in 1/2 cup crumbs and optional peanuts or chocolate sprinkles. Cover and refrigerate until ready to serve.

Makes about 36 cookies.
