ITALIAN BAKED POTATOES 
3 - 4 Idaho baking potatoes, unpeeled
8 oz. butter
1 pkg. dry Good Seasons Italian salad dressing mix

Preheat oven to 350 degrees. Cut potatoes in half lengthwise, then in 4 to 6 lengthwise slices. Melt butter in a glass baking dish. Place potato slices in bottom of dish and roll in butter, making sure all slices are coated with butter. Sprinkle Italian dressing mix on potatoes. Bake about 45 minutes or until done and golden brown. Optional: Sprinkle with 1/2 cup Parmesan cheese before baking. Serves 6 to 8.
