DANA'S SUPER SIMPLE CHICKEN
QUESADILLAS
 
1 lb. boneless, skinless chicken breast (cut into strips)
1 env. taco seasoning
water
8 flour tortillas
1 bag shredded taco cheese

TOPPINGS OF YOUR CHOICE:

salsa
dairy sour cream
lettuce
tomato
refried beans, etc.

Cook chicken breast in a skillet. Add the taco seasoning with the amount of water as directed on package. Stir to evenly coat chicken, and allow to simmer to reduce liquid.

Cut chicken strips into bite sized pieces. Heat a tortilla in a skillet over medium heat. Apply an even amount of cheese and chicken, and allow cheese to begin to melt. Top with an additional tortilla and press down gently so they stick together.

Allow to continue to heat for less than one minute and very gently flip. Heat on that side, and when cheese is fully melted, remove from heat. Continue with remaining ingredients.

Cut quesadillas into wedges (a pizza cutter works great) and serve with additional toppings. Enjoy!
